Tasting Notes

Nose
Initially notes of rum and raisin fudge and chocolate covered cappuccino create an unctuous feel. Dried cranberry and red currants develop with toasted cinnamon sticks and light ginger. With time sultanas, dark chocolate, and hints at cardamon spice come through.

Palate
Thick and coating with flavours of nut milk chocolate, ripe figs, and orange oil. Hints of espresso coffee compliment the sweetness while pink grapefruit and lemon oil build around the heady notes of sultanas, plums and baked banana. The tropical fruit continues to build along with a rich sweetness akin to Chantilly cream with a dark chocolate drizzle.

Finish
A pleasing dryness carrying some of the light spice of nutmeg and ground cinnamon while flavour of currents and sultanas continue to linger.
Solera Process
Solera Process
Before entering our 46-strong sherry butt solera, we further age our award-winning Black Tot Finest Caribbean rum in both oloroso and PX sherry casks for up to 2 years. From this ageing alone, the rum develops rich flavours such as dried fruit and winter spices, which is then added to our three-tier solera. After spending a year in each criadera (tier), a portion of the oldest rum is drawn for bottling. The cask is then replenished with rum from the next tier, allowing the process to continue seamlessly through the tiers.
The final criadera, known as the solera, always retains a portion of the original rum, ensuring that each bottle is a blend of rums of various ages. This method adds depth, complexity, and the unique flavours of Jerez, resulting in a consistently high-quality rum that tastes unlike any other.
Countries
Black Tot Historic Solera balances the fruity, honeyed notes of Barbadian rum, the rich, full-bodied elements of Guyanese rum and the funkiness of Jamaican rum. The combination of these countries creates a flavourful, multi-layered blend.

Barbados
The birthplace of molasses rum in the Caribbean. Barbados is famous for elegant and balanced blends of pot & column still rum, with notes of tropical fruits, vanilla, and coconut.

Guyana
Guyana historically has been one of the world’s leading producers of molasses and rum, and it was undoubtedly the heart of the Navy Rum blend. Despite the consolidation of its many distilleries, Guyana’s historic stills have survived and continue to make a variety of rich and flavourful rum marques at Demerara Distillers.

Jamaica
Classically a heavier style pot-still rum, Jamaican distilleries like Hampden utilise longer fermentation times, as well as wild yeast strains, and the addition of dunder and muck pits in their molasses ferment to create distinctively big, funky flavours.
